Quinoa Verde: Get Your Kids to Eat their Greens!

Quinoa Verde

This is my kid-friendly quinoa adaptation of Arroz Verde (Mexican green rice) and my favourite way to get my kids to eat their dark green leafy veggies.  



1 cup quinoa
½ cup packed spinach
½ bunch kale
½ cup broccoli tops and stems
2 Tbsp cilantro
1 small clove garlic
½ tsp Himalayan rock salt
pinch pepper
1 Tbsp coconut oil
2 cups water


In a saucepan, add quinoa, salt, pepper, oil.
In blender, combine spinach, kale, broccoli, cilantro, garlic, water, and blend until smooth.

Add blender mixture to saucepan dry ingredients and bring to a boil.  Reduce to simmer until quinoa is fully cooked (about 20 mins).  Allow to stand 5 mins.  Serve topped with grated parmesan, slivered almonds, or protein of  your choice.
