VBC (Vanilla-Berry-Coconut) Chia Seed Pudding

Blueberry coconut chia pudding

This healthful VBC (vanilla-berry-coconut) Chia Seed Pudding makes for a hearty breakfast, a delicious dessert and is great in children’s lunches instead of packaged puddings.

It’s full of several super foods and is rich in fibre, omega 3 fats, and it’s a complete protein. It’s simple to prepare and a big hit with adults and children.

Ingredients (yields 2-4  servings):

  • ¼ cup chia seeds
  • 1 ½  cup coconut milk or almond milk. Watch for nut allergies with almond milk if packing for school lunches.
  • ¼ teaspoon pure vanilla extract
  • 1 teaspoon maple syrup
  • Handful of fresh blueberries
  • 1 Tablespoon unsweetened coconut flakes
  • 1 teaspoon cinnamon

Directions:

Combine chia seeds, milk of choice, vanilla extract, and maple syrup in a glass jar and tighten lid. Shake vigorously until the ingredients are well mixed. Refrigerate the jar and contents for a minimum of 3 hours, until the mixture thickens. Remove from refrigerator when ready to serve and stir well just before serving. Serve in small bowls with toppings of blueberries, walnuts, and cinnamon. Enjoy!
